Crush the cauliflower in a blender until it gets a crumbly and "rice-like" texture. Season it with raw agave syrup, vinegar and salt until you find the taste irresistible. Then choose your favorite vegetables and cut them into very fine strips to make it easier portioning them on the nori sheets.
Put a nori sheet in front of you and spread the cauliflower mixture evenly in a thin layer on it. Omit about 1 cm of each end to make it easier to stick the ends together later. Place the vegetables (e.g. carrots, avocado, cucumber, peppers, mushrooms, sprouts) as small stripe on one end of the cauliflower-nori sheet and roll up your sushi.
Repeat the above as many times and with as many nori sheets as you like. The given amount serves about 2-4 nori sheets.
Now cut the rolls into small, about 2 cm thick pieces. Use a sharp knife. Serve your sushi with different sauces for dipping. How about Lifefood Sprouted Chick Pea Hummus Dip or unpasteurized soy sauce?
