Agave syrup is made by juicing the leaves of the Mexican plant agave (same agave as the one for tequila). For the Lifefood agave syrup the juice is concentrated by evaporation in vacuum at very low temperatures so the juice does not caramelize.
- The sugars in agave syrup are mainly present in the form of fructose, therefore the syrup has a low glycemic index (around 27).
- Comparing to other sweeteners it is significant for a high level of sweetness, so smaller quantities are needed and less calories are involved.
