Carob powder (Ceratonia siliqua) is the finely ground, dried fruit pulp found in the pods of the carob tree. With a sweet, fruity and caramel-like flavour, raw carob powder is a perfect alternative to cacao powder.
What makes the Lifefood carob so special? Unlike most carob powders on the market which are dark brown due to the roasting of the carob pods, Lifefood carob pods are not roasted and therefore the powder has a very light brown-beige colour.

How can you tell whether the carob powder is raw?
Truly raw carob is a unique product and Lifefood is proud to offer this luxurious product to you. Most of the carob powders on the market are made from roasted carob pods. The typical appearance of such powder is dark brown (same colour as cacao powder) with a specific, unique smell and flavour (nothing wrong with it, in fact it makes delicious desserts). Unfortunately, there are lot of powders labelled as raw, but they do taste and smell the same as roasted carob powder.
You would know for sure that such powder is not raw, as it is the roasting process that creates such colour and flavour. Truly raw carob powder that has not experienced any kind of roasting is very light brown-beige in colour (not at all like cacao powder in appearance) and its flavour is much milder and delicate. You will be able to tell the difference yourself.
