Mix the grated carrots with the yacon syrup and the lemon juice and leave for 15 minutes to allow the ingredients to rest.
Then pour off the water from the mixture and set it aside - you can drink it as a juice. Now mix the grated carrots with the agave syrup and the walnuts (really finely ground into walnut flour.)
Make the pudding in the shape you wish.
Finally, grate some chocolate shavings and sprinkle them on top of the pudding.
An irresisitble raw snack is ready!
